I am lead by the ingredients and foods that are available in beautiful Todos Santos. Rather than planning my dishes, I let them plan themselves; the abundance of the produce here in Baja along with seafood that is caught fresh daily is a privilege to have on my doorstep.
I have a very diverse food background, influenced by my family history and all of my travels. While I have Sicilian roots that pull me towards Mediterranean flavors, I have also lived everywhere from Asia, to Charleston, to Sante Fe, to Napa Valley, and now Todos Santos. All these food cultures contribute to my craft, showing up in unexpected ways in my dishes.
