I am led by the ingredients and foods that are available and sourced locally, making all of my dishes a true representation of what Baja has to offer. The rich soil in Todos Santos that offers an abundance of produce along with seafood caught fresh daily out of both the Pacific Ocean and the Gulf of California. This almost makes my job too easy. I have a very diverse food background, influenced by my family history and all of my travels. While I have Sicilian roots that pull me towards Mediterranean flavors, I have also lived from Asia, to Charleston, to Sante Fe, to Napa Valley, and now Todos Santos. All these food cultures contribute to my craft, showing up in unexpected ways in my dishes.
